Coriander adds wonderful flavour, it is used in cuisines all over the world. Coriander leaves add a slightly herby citrus note to whatever you sprinkle them on. Coriander leaves tend to be added after cooking, usually as a flavoursome garnish!  Used a lot in Indian and Mexican food.
