Spicy Fish Burger
The Spicy Joe fish burger with chilli mayo is a great recipe to have on-hand midweek. It's super-quick (ready in under 30 minutes) and easy, but is packed full of flavour and a chilli hit. Perfect served with delicious smoky paprika potato wedges.
2 Pieces White fish, such as cod or pollock
1/2 Cucumber, sliced into ribbons
1 tsp White Wine Vinegar
1/2 tsp Golden Caster sugar
3 tbls Mayo
2 Brioche Buns
150g Plain Flour
2 tbls Spicy Joes Cajun Spice Blend
1.Toss the cucumber with the vinegar, sugar and some salt, then set aside.
2. Mix the mayo with 1 tbls of the spice blend, Set aside for later.
3. Put the flour in a bowl add the Cajun Spice Blend, mix well. Coat the fish all over with the flour, making sure all of the fish has a really good coating.
4.Heat 2 tbsp of oil in a pan the cook the fish for 2-3 minutes on each side until it is golden and cooked through.
5. Very Lightly toast the Brioche buns then spread the with the chilli mayo.
6. Place some Rocket or Lettuce on the bottom then place the fish on top. Add with the cucumber and the bun lid.
Delicious served with some potato wedges or fries.
