600g skinless boneless chicken breasts cut into 4-6 pieces
1/2 cup tomato ketchup
1/2 cup soy sauce low sodium preferred
1/4 cup honey
2 tbls minced garlic
1 teaspoon dried basil
Start by cutting your skinless boneless chicken breast cut into large chunks
Combine 1/2 cup of ketchup, 1/2 cup soy sauce (low sodium preferred), 1/4 cup honey, garlic and dried basil. Whisk together.
Place the chicken into a large casserole dish. Pour over the sauce, making sure each peice of chicken is well covered.
Cook on a low heat for 2 - 2.5 hours.
Serve with some nice boiled rice or creamy mash and vegetables.
