Fenugreek is a small, hard, mustard yellow seed, it  has a tangy, bitter, burnt-sugary flavour. 
Very often dry roasted by using a heavy pan on a medium heat and then crushed before being added to a curry.
Also totally delicious sprinkled over a salad.
