Creamy Cajun Chicken Pasta
Our light creamy Cajun chicken pasta dish is made with the perfect combination of juicy chicken breast, tomato sauce and light cream cheese, it's so easy to cook and yet delivers huge flavour. Prepared and cooked in less than half an hour.
The perfect weeknight pasta dinner that everyone will enjoy !
- 2 tbls olive oil
- 500g chicken breast chopped into bite size pieces
- 1 large onion chopped
- 1 medium green pepper chopped
- 2 jalapeno peppers chopped
- 1 stalk celery chopped
- 4 cloves garlic minced
- 2 tbls tomato puree
- 1 cup chicken stock + more as needed
- 2 ts Spicy Joes Cajun seasoning
- Salt and pepper to taste
- 3 ts cream cheese
- 2 tbls sour cream
- 30 - 40g pasta (cooked)
- Sliced lemon and chopped parsley for serving
Heat a large pan on a medium heat and add the olive oil.
Add the chicken, onion, peppers and celery. Cook for about 7-8 minutes, until the vegetables are softened and the chicken is nicely cooked.
Add the garlic and stir. Cook for about a minute.
Add the tomato puree, stock, Spicy Joes Cajun seasoning salt and pepper (to taste). Reduce the heat to low and simmer about 15 minutes.
Mix in the cream cheese and sour cream.
Add the cooked pasta and stir.
Serve into bowls and top with lemon and parsley. Enjoy!
