Celery seeds are bitter when raw but you can slightly mellow the flavour by dry-toasting them, just be careful not to burn. Toasted celery seeds pair well with eggs, and make an excellent addition to soups. They are also fantastic when added to some drinks, Bloody Mary anyone?
