Cassia is an aromatic bark which has a similar flavour to cinnamon, but is a thicker and slightly coarser wood.  You can use Cassia Bark to add flavour to any spicy dish. For example, you can pop a stick of bark in the pan whilst stir-frying, or add it to Basmati rice when cooking. It also has plenty of uses in desserts as well, being great to infuse flavour.
